Thai Style Chicken Patties

Serves 6

Ingredients
400gms lean mince chicken
165gms masterfoods thai base sause
1 tblsp low fat milk
2 tblsp chopped coriander
1/2 onion
1 tblsp grated lemon rind
1 teaspoon olive oil
2 pieces of stale bread or gluten free bread crumbs
2 teaspoons of ginger grated or sliced

Chillie Sauce (optional)
1 tablespoon vinegar
1 tablespoon water
1 tablespoon sweet chillie sauce
2 teaspoons soy sauce
1 teaspoon sugar

Method:
Heat oil in fry pan, fry onions and thai base sauce
remove and cool
combine mixtgure in a bowl with meat, bread crumbs, lemon rind, coriander and milk
shape mixture into small patties, refrigerate for 20 mins
Shallow pan fry patties in hot oil until brown
Drain on absorbant paper and serve with garden salad and chillie sauce if desired
